Garlic greensa re less intense than mature garlic bulbs but still offer a pleasant, mildly spicy flavor. They are commonly used in early spring when they first appear, bringing freshness to a variety of dishes. Nutritionally, garlic greens share many benefits with mature garlic, including high levels of vitamins C and B6, manganese, and antioxidants, contributing to heart health and immune support.


Recipe: Garlic Greens Marinated Steamed Fish


Ingredients:

- 2 fish fillets (such as trout, snapper, or sea bass)

- 1 cup Al Aliyo’s garlic greens, finely chopped

- 1 cup fresh coriander, chopped

- 5-6 green chillis, chopped

- 1 tablespoon corn oil

- 1 teaspoon white pepper

- Lemon slices, for serving

- Salt to taste

- Banana leaf for steaming the fish


Method:

1. Prepare the Marinade: Wipe the banana leaf clean and grease it with a little oil. On the banana leaf, combine the chopped garlic greens, coriander leaves, green chillis, oil and salt. Mix well to create a fragrant marinade that will infuse the fish with aromatic flavors.


2. Marinate the Fish: Place the fish on the banana leaf and rub the marinade, ensuring it's well-coated. Wrap the fish in the banana leaf and tie it with a cotton string. Let the fish marinate for at least 30 minutes in the refrigerator to allow the flavors to meld.


3. Set Up for Steaming: Prepare your steamer by filling the bottom pot with water, making sure that the water does not touch the upper section where the fish will be placed. Bring the water to a simmer.


4. Steam the Fish: Place the banana leaf parcel on the steaming rack inside the steamer. Cover and steam for about 10-15 minutes, depending on the size of the fish, or until the fish is cooked through and flakes easily with a fork.



5. Serve: Carefully remove the banana leaf parcel from the steamer and place it on a serving plate. Open gently. Garnish with lemon slices to add a touch of brightness and Enjoy!
